Cooking With Laudisio Show!

From the Laudisio Kitchen

We love to share our best recipes with our friends. Why? Because we show our love and appreciation in the form of food – it is the Italian way! If you do make this recipe for your friends or family, please be sure to let us know how you like it!

ROASTED PEPPERS

 Ingredients:

Red, gold and yellow peppers – one each
Extra virgin olive oil
1 clove of garlic


1 lemon
Italian parsley
Salt
Black pepper

Method:
  1. Place whole peppers on an open burner or grill and rotate them on the fire with tongs until the pepper skins are all black
  2. Place the peppers in a brown paper sack with an abundance of sea salt
  3. Close the bag, shake the peppers in the salt, and allow them to sit for 3-5 minutes
  4. Rinse the peppers under cold water to facilitate the removal of the skin

Suggested Wine pairing: Dubini Bianco IGT 2007 Palazzone [Umbria] (Verdello, Grechetto, Malvasia, Dupreggio, Procanico) succulent feel, white plums, citrus, herbs, almonds & hint of smoke. Here is a sexy little wine from Umbria--the green heart of Italy.

 

  1. Cut the peppers open over a strainer in order to preserve the juice
  2. Remove the seeds and cut the peppers into ¼ inch strips
  3. Toss the sliced peppers in a bowl with saved pepper juice, 1 smashed clove of garlic, 3-5 tablespoons of extra virgin olive oil, fresh lemon juice, chopped parsley, and salt & pepper to taste.
  4. Simple and delicious!

Location on list: Whites by the Glass

Food: Grilled fish and seafood. Excellent accompaniment for our seared scallops with butternut squash and cauliflower as well as with the Scallop Risotto. Pairs niceely with the Linguine with Cod and Rock Shrimp. A wonderful weight for all medium seafood dishes

Antonio would like to personally thank everyone for making the Wednesday evening Farmer’s Market a success! As this summer draws to a close, we appreciate everyone who visited Antonio, and supported the local Farmers each and every week. While the Wednesday evening market is ending this week, you may still visit Antonio every Saturday from 8am – 2pm (13th Street between Canyon Boulevard and Arapahoe Avenue) until November 1! Don’t miss the opportunity to sample some delicious pizza straight from our traveling wood-fired oven!

Boulder Grassroots for Obama will be hosting a fundraising brunch at Laudisio on Sunday, October 12, from 11:00 am to 1:00 pm.

Our mission is to work synergistically as a coordinator, organizer and optimizer for political activities centered in Boulder County to support the election of Senator Barack Obama as President of the United States in November 2008.”
