From the Laudisio Cookbook...

"Mama would call it Pasta Puttannaise. She got this name from a customer at the old family bakery. Vincenza would ask her what she was going to cook for dinner, and the woman replied: Spaghetti Puttannaise. Putana means a lady of the evening. So pasta puttannaise means a dish of the evening, or a "quick dish." These next recipes are quick, usually made in the amount of time it takes to boil water and cool pasta. Enjoy these authentic Laudisio recipes."
